Drumsticks Are Not Drummies…..
February 10th, 2003
Important recipe tip. *smile*
Our favorite honey wings used to come from Nikki’s. But since they have closed, we now have to make our own. After much tasting and experimentation, Steve and Scott have come up with a wonderful recipe. They are not too spicy….in fact they are very tasty.
These are a great with the Captain Lambchops below.
Also, this same recipe becomes standard buffalo wings if you remove the honey. See also
Here is our favorite honey wings recipe:
2 1/2 lbs Chicken Drummies
Water
1/2 cup Salt
1/4 cup Sugar
Salt & Pepper
Oil
5 tablespoons Butter
5 tablespoons Durkee Hot Sauce
3-5 tablespoons Honey (depending on your tastes)
5+ dashes Tabasco (depending on your tastes)
2 tablespoons Vinegar (cider preferred / white will work)
Brine 2 packages of chicken drummies in water, salt and sugar for about 1 hour. Remove drummies, rinse and pat dry.
Preheat oven to 425 degrees. Place drummies on baking sheet and toss with oil. Season with Salt and Pepper. Bake for about 40 minutes tossing once during cooking.
Melt butter in a sauce pan over medium heat. Add hot sauce and tabasco. Bring to simmer. Add honey, simmer 10 minutes or until desired consistency. Add vinegar. Toss with drummies. Serve immediately with bread, celery and dressing (blue cheese, ranch or parmesan).
Enjoy.
